I've made a discovery! Going to the gym in the morning means you get to start drinking earlier in the evening! Which leads to a very slow Saturday morning. I think I'll go back to evening gym classes. : )
5 people...7 bottles of wine. Nuff said.
If we can get off our butts we are going to brave Costco today. Need to find that turkey so I can start defrosting it. Right? How long do they take to defrost? I am definitely in over my head... Actually I think I'm more worried about the mashed potatoes after last week's situation. Maybe I can put one of the guests on that one.

Ok, I am going to save your bacon...er, I guess turkey. Here's what you do:
Put that sucker in the fridge today as soon as you get it and let it start defrosting. It will take about two and a half days, depending. Make sure you put it in something to catch the water and juices or you will have an extremely unpleasant clean up job for Friday. (Ick. Learned the hard way)
On Wednesday morning, fill up a five gallon bucket (stock pot, or something like that) with a gallon or so of water. Mix in a cup of kosher salt, 1/2c sugar and a few peppercorns if you have 'em. Take the clean turkey, minus the guts and soak it for 12-16 hours in a cold place. I am thinking just outside in Boston would probably work!
After the time is up, rinse the turkey, pat it dry and set aside until time to roast. Coat the sucker with a stick of soft butter with sage, thyme, poultry seasoning, salt and pepper, than roast in the oven. It turns out perfect every time!!
